Peach Chiffon Pie is a delightful summer dessert that combines fresh peaches with a light and fluffy chiffon filling.

  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 tablespoon unflavored gelatin
  • 1/4 cup water
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 pre-baked pie crust

Instructions

  1. In a bowl, combine sliced peaches, sugar, and lemon juice. Let sit for 30 minutes to macerate.
  2. In a small saucepan, dissolve gelatin in water over low heat until fully melted.
  3. Mix the gelatin with the peach mixture and refrigerate until it begins to thicken.
  4. Whip the heavy cream with vanilla extract until soft peaks form.
  5. Fold the whipped cream into the peach mixture until well combined.
  6. Pour the filling into the pre-baked pie crust and refrigerate until set, about 4 hours.
