  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup peach puree
  • 1 teaspoon baking powder

  • 1/4 cup sparkling wine

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and peach puree.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the sparkling wine gently.
  8. Pour the batter into the prepared cupcake liners, filling each about two-thirds full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before frosting.
