Ingredients

  • 2 cups chicken broth
  • 1 cup sliced mushrooms
  • 4 slices turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add mushrooms and cook until softened.
  4. Stir in rice and cook for a minute.
  5. Add chicken broth, thyme, salt, and pepper. Bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  7. Fluff rice and stir in bacon before serving.

Notes

  • For added flavor, consider using vegetable broth instead of chicken broth.
  • Feel free to add other vegetables like peas or spinach for extra nutrition.
