A simple and delicious one-pot dish featuring creamy spinach and tomato tortellini, perfect for family dinners.

  • 2 cups fresh spinach
  • 1 can (14.5 oz) diced tomatoes
  • 1 package (9 oz) tortellini
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the fresh spinach and cook until wilted.
  3. Stir in the diced tomatoes and tortellini.
  4. Pour in the vegetable broth and bring to a boil.
