- 1 tablespoon olive oil
- 1 pound chicken thighs, boneless and skinless
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon ginger, grated
- 1 cup jasmine rice
- 1 can coconut milk (13.5 oz)
- 1 cup chicken broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup peas, frozen
- 2 green onions, sliced
- Heat the olive oil in a large pot over medium-high heat.
- Add the chicken thighs and cook until browned, about 5-7 minutes.
- Remove the chicken and set aside.
- Add the onion, garlic, bell pepper, and ginger to the pot; sauté until softened.
- Stir in the rice and cook for an additional minute.
- Pour in the coconut milk and chicken broth, then return the chicken to the pot.
- Season with salt and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Stir in the peas and cook for another 5 minutes.
- Top with green onions before serving.
