This One Pot Coconut Chicken and Rice is the perfect comfort meal that’s easy to prepare and full of flavor.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken thighs, boneless and skinless
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon ginger, grated
  • 1 cup jasmine rice
  • 1 can coconut milk (13.5 oz)
  • 1 cup chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup peas, frozen
  • 2 green onions, sliced

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the chicken thighs and cook until browned, about 5-7 minutes.
  3. Remove the chicken and set aside.
  4. Add the onion, garlic, bell pepper, and ginger to the pot; sauté until softened.
  5. Stir in the rice and cook for an additional minute.
  6. Pour in the coconut milk and chicken broth, then return the chicken to the pot.
  7. Season with salt and pepper.
  8. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  9. Stir in the peas and cook for another 5 minutes.
  10. Top with green onions before serving.

Notes

  • For extra flavor, you can marinate the chicken beforehand.
  • Serve with lime wedges for a zesty touch.
