  • 1 pound boneless chicken breasts

  • 1 cup celery, chopped
  • 1 cup onion, chopped

  • 8 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 pound gnocchi
  • 2 cups baby spinach
  • 1 cup heavy cream
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned and cooked through. Remove and shred.
  2. Add carrots, celery, onion, and garlic to the pot. Sauté until vegetables are tender.
  3. Pour in chicken broth and add thyme and rosemary; bring to a simmer.
  4. Add gnocchi and cook according to package instructions.
