  • 1 whole chicken
  • 4 cups chicken broth
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup butter
  • 2 eggs
  • 1/2 cup milk
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped

Instructions

  1. In a large pot, place the whole chicken and cover with chicken broth. Bring to a boil and simmer until chicken is cooked through.
  2. Remove the chicken, cool, and shred into pieces.
  3. Add carrots, celery, and onion to the pot and cook until soft.
  4. In a bowl, mix flour, baking powder, salt, butter, eggs, and milk to make dumpling dough.
  5. Drop spoonfuls of dough into the boiling broth.
  6. Cover and cook for 15 minutes without lifting the lid.
  7. Add shredded chicken back to the pot, stir gently, and season to taste.
