- 9 sheets lasagna noodles
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 5 cups fresh spinach
- 15 ounces ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 jar marinara sauce
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the mushrooms and cook until they are browned. Stir in the spinach until wilted.
- In a bowl, combine ricotta cheese with Parmesan cheese.
- Spread a layer of marinara sauce on the bottom of a baking dish.
