  • 9 sheets lasagna noodles
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 5 cups fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 jar marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  4. Add the mushrooms and cook until they are browned. Stir in the spinach until wilted.
  5. In a bowl, combine ricotta cheese with Parmesan cheese.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer noodles, ricotta mixture, vegetable mix, and mozzarella cheese. Repeat layers, ending with mozzarella on top.
  8. Bake for 30-35 minutes until cheese is bubbly and golden.
  9. Let the lasagna rest for 10 minutes before slicing.
