1 cup warm water
2 teaspoons active dry yeast
1 tablespoon granulated sugar
2 tablespoons unsalted butter, melted
3 cups all-purpose flour
1 teaspoon salt
8 ounces mozzarella cheese, cut into sticks
1/4 cup baking soda
1 egg, beaten
coarse sea salt for topping
Instructions
In a large bowl, combine warm water, yeast and sugar. Let it sit for about 5 minutes until frothy.
Stir in melted butter, flour, and salt until a dough forms. Knead for about 5 minutes until smooth.
Place the dough in a greased bowl, cover and let rise for 1 hour.
Preheat the oven to 450°F (232°C) and line two baking sheets with parchment paper.
Divide the dough into small pieces and wrap each piece around a mozzarella stick.
In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for about 30 seconds, then transfer to the baking sheets.
Brush each pretzel with beaten egg and sprinkle with coarse sea salt.
Bake for 12-15 minutes until golden brown.
Let cool slightly before serving.
Notes
