  • 1 cup warm water
  • 2 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 8 ounces mozzarella cheese, cut into sticks
  • 1/4 cup baking soda
  • 1 egg, beaten
  • coarse sea salt for topping

Instructions

  1. In a large bowl, combine warm water, yeast and sugar. Let it sit for about 5 minutes until frothy.
  2. Stir in melted butter, flour, and salt until a dough forms. Knead for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover and let rise for 1 hour.
  4. Preheat the oven to 450°F (232°C) and line two baking sheets with parchment paper.
  5. Divide the dough into small pieces and wrap each piece around a mozzarella stick.
  6. In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for about 30 seconds, then transfer to the baking sheets.
  7. Brush each pretzel with beaten egg and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes until golden brown.
  9. Let cool slightly before serving.
