  • 1/4 cup mozzarella cheese, shredded
  • 2 slices turkey bacon, cooked and chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a bowl, whisk together the eggs, salt, and pepper.
  2. In a non-stick skillet, cook the turkey bacon until crispy.
  3. Pour the egg mixture into the skillet over the bacon, allowing it to cook for a minute.
  4. Sprinkle the mozzarella cheese, parsley, and chives over one half of the omelet.
  5. Fold the other half over the filling and cook until the cheese is melted.
