  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd
  • 1/4 cup heavy cream
  • 2 tablespoons brown sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Stir in the lemon curd and heavy cream until the mixture is smooth.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until edges are lightly golden.
  8. Remove from oven and immediately sprinkle with brown sugar.
  9. Using a kitchen torch, carefully caramelize the brown sugar until bubbly and golden.
  10. Let cool before serving.

Notes

  • For a more intense lemon flavor, add extra lemon zest to the dough.
  • These cookies can also be topped with whipped cream for added richness.
