- 2 large flour tortillas
- 1 cup cooked spinach
- 1 cup feta cheese, crumbled
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup Kalamata olives, sliced
- 1 teaspoon dried oregano
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Add spinach, feta, sun-dried tomatoes, olives, oregano, and mozzarella cheese on half of the tortilla.
- Fold the tortilla over and cook until golden, about 3-4 minutes.
- Flip and cook for another 3-4 minutes until the cheese melts.
- Remove from heat, slice, and serve warm.
Notes
- For extra flavor, add a dash of red pepper flakes.
- Pair with a yogurt dip for a refreshing taste.
