Enjoy a delicious twist on the traditional quesadilla with Mediterranean flavors.

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked spinach
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet.
  3. Add spinach, feta, sun-dried tomatoes, olives, oregano, and mozzarella cheese on half of the tortilla.
  4. Fold the tortilla over and cook until golden, about 3-4 minutes.
  5. Flip and cook for another 3-4 minutes until the cheese melts.
  6. Remove from heat, slice, and serve warm.

Notes

  • For extra flavor, add a dash of red pepper flakes.
  • Pair with a yogurt dip for a refreshing taste.
