A refreshing and nutritious Mediterranean Bean Salad, perfect for a light meal or side dish.

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, black beans, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
