A delightful and creamy loaded potato soup that’s perfect for cozy nights, topped with crispy turkey bacon.

Ingredients

  • 5 large russet potatoes
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 8 slices turkey bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped chives

Instructions

  1. Peel and dice the potatoes into small cubes.
  2. In a large pot, sauté the onions and garlic until fragrant.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in the heavy cream, salt, pepper, and thyme. Heat through.
  6. Serve hot, topped with turkey bacon, cheddar cheese, and chives.

Notes

  • This soup can be made ahead of time and reheated.
  • For a lighter version, substitute heavy cream with milk.
