  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 lemon, juiced
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, sautéing until tender.
  2. Add the chicken breasts and cook for about 5 minutes, until slightly browned.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the rice and reduce the heat. Simmer until the rice is cooked and the chicken is tender.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Stir in lemon juice and fresh dill. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional dill if desired.
