Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 2 tablespoons capers
  • 2 parsley sprigs, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Flatten the chicken breasts to an even thickness.
  2. Season the flour with salt and pepper, then dredge the chicken in the flour.
  3. In a skillet, heat olive oil over medium heat and cook the chicken until golden brown.
  4. Remove the chicken and keep warm.
  5. In the same skillet, add lemon juice, chicken broth, and capers, scraping the bottom of the pan.
  6. Return the chicken to the pan and simmer for a few minutes.
  7. Garnish with parsley before serving.

Notes

  • For extra flavor, marinate the chicken in lemon juice for an hour before cooking.
