- 4 slices turkey bacon
- 1 cup diced celery
- 1 cup diced carrots
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- 1 cup pasta of choice
- 2 cups spinach
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
- Add the celery, carrots, onion, and garlic to the pot, sautéing until soft.
- Pour in the chicken broth and add tomatoes, Italian seasoning, and the chopped turkey bacon.
