Warm up with this comforting bowl of Italian Penicillin Soup made with turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup pasta of choice
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add the celery, carrots, onion, and garlic to the pot, sautéing until soft.
  3. Pour in the chicken broth and add tomatoes, Italian seasoning, and the chopped turkey bacon.
  4. Bring to a boil, then add the pasta and cook according to package instructions.
  5. Stir in the spinach and let it wilt before serving.

Notes

  • For an extra kick, add some red pepper flakes.
  • Can substitute turkey bacon with regular bacon if preferred.
