- 1 pound boneless, skinless chicken breasts
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 1/4 cup heavy cream
- 1 cup biscuit dough, cut into small pieces
- Set the Instant Pot to sauté mode. Add the chicken, carrots, celery, peas, onion, chicken broth, garlic powder, onion powder, thyme, and black pepper.
- Close the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
- Quick release the pressure and remove the chicken. Shred the chicken and return it to the pot.
- Add heavy cream and biscuit pieces. Stir until combined.
- Set the Instant Pot to sauté mode again and cook for an additional 5 minutes, until the biscuit pieces are cooked through.
Notes
- For a thicker soup, add a cornstarch slurry during the last few minutes of cooking.
- Adjust seasoning to taste.
