A delicious and creamy Instant Pot corn chowder made with cream cheese and turkey bacon, perfect for a cozy meal.

Ingredients

  • 4 cups fresh corn kernels
  • 1 Tbs olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 8 oz cream cheese, softened
  • 4 slices turkey bacon, cooked and crumbled
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 cup milk

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil.
  2. Add the onion and garlic, sautéing until softened.
  3. Add corn, vegetable broth, salt, pepper, and paprika.
  4. Seal the lid and cook on high pressure for 10 minutes.
  5. Release the pressure, add cream cheese and milk, and stir until smooth.
  6. Top with crumbled turkey bacon before serving.

Notes

  • This chowder can be topped with additional bacon if desired.
