- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices turkey bacon, chopped
- 4 cups beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 potatoes, cubed
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Set the Instant Pot to sauté mode and cook the chopped turkey bacon until crispy. Remove and set aside.
- Add olive oil to the pot and brown the beef in batches.
- Add onions and garlic, cooking until softened.
- Stir in the tomato paste, thyme, salt, and pepper.
- Pour in the beef broth and add the carrots and potatoes.
- Close the lid and cook on high pressure for 35 minutes.
- Release pressure and stir in the cooked turkey bacon before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry at the end.
