  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 slices turkey bacon, chopped
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Set the Instant Pot to sauté mode and cook the chopped turkey bacon until crispy. Remove and set aside.
  2. Add olive oil to the pot and brown the beef in batches.
  3. Add onions and garlic, cooking until softened.
  4. Stir in the tomato paste, thyme, salt, and pepper.
  5. Pour in the beef broth and add the carrots and potatoes.
  6. Close the lid and cook on high pressure for 35 minutes.
  7. Release pressure and stir in the cooked turkey bacon before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry at the end.
  • Using fresh herbs will elevate the flavor even more.
