- 2 cups sushi rice
- 2 cups water
- 1 pound salmon fillet
- 1/4 cup mayonnaise
- 2 tablespoons sriracha
- 1/4 cup chopped green onions
- 1 sheet nori, cut into strips
- 1/2 cup furikake seasoning
- Preheat the oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear.
- In a medium pot, combine the sushi rice and water; bring to a boil, then reduce heat and cover, cooking for about 18 minutes.
- While the rice is cooking, bake the salmon for 15-20 minutes, or until fully cooked.
- In a bowl, mix the cooked salmon with mayonnaise, sriracha, and green onions.
- Once the rice is done, spread it in an even layer in a baking dish.
- Top the rice with the salmon mixture and sprinkle furikake over the top.
- Bake for an additional 10 minutes until heated through and golden.
- Serve hot, garnished with nori strips.
