  • 2 cups sushi rice
  • 2 cups water
  • 1 pound salmon fillet
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1/4 cup chopped green onions
  • 1 sheet nori, cut into strips
  • 1/2 cup furikake seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. In a medium pot, combine the sushi rice and water; bring to a boil, then reduce heat and cover, cooking for about 18 minutes.
  4. While the rice is cooking, bake the salmon for 15-20 minutes, or until fully cooked.
  5. In a bowl, mix the cooked salmon with mayonnaise, sriracha, and green onions.
  6. Once the rice is done, spread it in an even layer in a baking dish.
  7. Top the rice with the salmon mixture and sprinkle furikake over the top.
  8. Bake for an additional 10 minutes until heated through and golden.
  9. Serve hot, garnished with nori strips.

Notes

  • For extra flavor, add avocado slices on top before baking.
  • Adjust the sriracha according to your spice preference.
