  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup flour (optional, for thickening)

Instructions

  1. In a large skillet, brown the beef in batches.
  2. Transfer the beef to the crockpot.
  3. Add the beef broth, potatoes, carrots, celery, onion, garlic, tomato paste, Worcestershire sauce, thyme, salt, and pepper to the crockpot.
  4. Stir to combine and cover.
  5. Cook on low for 8 hours or on high for 4 hours.
  6. If using flour, mix it with some cold water and stir into the stew 30 minutes before serving to thicken.
