- 2 pounds beef chuck, cut into cubes
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup flour (optional, for thickening)
- In a large skillet, brown the beef in batches.
- Transfer the beef to the crockpot.
- Add the beef broth, potatoes, carrots, celery, onion, garlic, tomato paste, Worcestershire sauce, thyme, salt, and pepper to the crockpot.
- Stir to combine and cover.
- Cook on low for 8 hours or on high for 4 hours.
- If using flour, mix it with some cold water and stir into the stew 30 minutes before serving to thicken.
