2 ripe bananas
1 cup rolled oats
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
2 large eggs
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon cinnamon
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
In a bowl, mash the ripe bananas.
Add the oats, Greek yogurt, honey, eggs, baking soda, salt, vanilla, and cinnamon to the mashed bananas and mix well.
Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 18-20 minutes or until a toothpick comes out clean.
Let the muffins cool for a few minutes before transferring to a wire rack.
