Learn how to make delicious Gipfeli, a traditional Swiss pastry that’s perfect for any occasion.

  • 500g all-purpose flour
  • 200ml milk
  • 100g unsalted butter
  • 50g granulated sugar
  • 10g salt
  • 10g active dry yeast
  • 1 egg (for egg wash)

Instructions

  1. In a bowl, mix warm milk and yeast. Let it sit for 5 minutes.
  2. In a large mixing bowl, combine flour, sugar, and salt.
  3. Add melted butter and the yeast mixture into the dry ingredients.
  4. Knead the dough until smooth and elastic, about 10 minutes.
  5. Cover the bowl with a cloth and let the dough rise for 1 hour in a warm place.
  6. Preheat the oven to 180°C (350°F).
  7. Roll out the dough and cut it into triangles.
  8. Roll each triangle tightly to form the gipfeli shape.
  9. Place the rolled gipfeli on a baking sheet and brush with the egg wash.
  10. Bake for 15-20 minutes or until golden brown.
