Instructions

  1. Start by smashing the cucumbers gently with a rolling pin or a heavy object to break the skin and create irregular chunks.
  2. Sprinkle the sea salt over the cucumbers and let them sit for 15 minutes to release excess moisture.
  3. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, grated ginger, sugar, and minced garlic.
  4. Drain the cucumbers and rinse with cold water to remove excess salt. Pat dry with paper towels.
