A delightful roast of garlic herb potatoes, carrots, and zucchini for an easy side dish.

  • 1 cup carrots, sliced
  • 1 cup zucchini, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the potatoes, carrots, and zucchini.
  3. In a small bowl, mix olive oil, garlic powder, oregano, thyme, salt, and pepper.
  4. Pour the seasoning mixture over the vegetables and toss to coat.
