A rich and creamy blueberry cheesecake that combines the sweetness of fresh blueberries with a classic cheesecake base.

Ingredients

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 3 packages (8 ounces each) cream cheese
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon lemon juice
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, beat the cream cheese until smooth.
  3. Add sugar and vanilla extract, and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in the flour and lemon juice.
  6. Fold in the sour cream and blueberries gently.
  7. Pour the mixture into a prepared springform pan.
  8. Bake for 50-60 minutes or until the center is set.
  9. Let cool completely before refrigerating for at least 4 hours.
  10. Serve chilled and enjoy!

Notes

  • For a swirl effect, reserve some blueberries and fold them in last.
  • Serve with additional fresh blueberries on top for garnish.
