A delicious twist on the classic French potato salad, featuring turkey bacon for added flavor.

Ingredients

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Boil the baby potatoes until fork-tender, about 15-20 minutes. Drain and cool.
  2. Cook the turkey bacon until crispy, then chop into pieces.
  3. In a bowl, mix together mayonnaise, Dijon mustard, parsley, red wine vinegar, salt, and pepper.
  4. Add the cooled potatoes and bacon pieces to the dressing and toss gently to coat.
  5. Chill in the refrigerator for at least one hour before serving.

Notes
