This Easy Tofu Soup is a delightful, comforting dish that can be made in just 30 minutes using only one pot. Perfect for a quick weeknight meal!

Ingredients

  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 block firm tofu, cubed
  • 2 cups spinach
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes, optional

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add chopped onion and garlic, sauté until soft.
  3. Pour in vegetable broth and bring to a boil.
  4. Add cubed tofu, spinach, soy sauce, sesame oil, ginger, and red pepper flakes.
