  • 1 pound chicken breast, sliced
  • 2 tablespoons red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup bell peppers, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons brown sugar
  • 1 tablespoon vegetable oil
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the sliced chicken breast and cook until browned.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir until well combined.
  5. Add the bell peppers and simmer for about 10 minutes, until the chicken is cooked through.
  6. Remove from heat and stir in the fresh basil just before serving.
