- 1 pound chicken breast, sliced
- 4 cups chicken broth
- 1 can coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 2 cups mushrooms, sliced
- 1 cup bell peppers, sliced
- 1 cup baby spinach
- 2 kaffir lime leaves
- 1 lime, juiced
- 2 tablespoons fresh cilantro, chopped
- In a large pot, heat the chicken broth over medium heat.
- Add the sliced chicken and cook until no longer pink.
- Stir in the coconut milk, red curry paste, fish sauce, and sugar; mix well.
