Ingredients

  • 1 pound chicken breast, sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 2 cups mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 1 cup baby spinach
  • 2 kaffir lime leaves
  • 1 lime, juiced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. Add the sliced chicken and cook until no longer pink.
  3. Stir in the coconut milk, red curry paste, fish sauce, and sugar; mix well.
  4. Add the mushrooms and bell peppers, simmer for 5 minutes.
  5. Stir in the spinach and kaffir lime leaves, cooking until the spinach wilts.
  6. Remove from heat and add lime juice and cilantro before serving.

Notes

  • Adjust the spiciness by adding more or less red curry paste.
  • Serve with rice for a heartier meal.
