  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 pound boneless chicken thighs diced
  • 2 cups bell peppers sliced
  • 2 cups spinach
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the garlic and ginger, cooking until fragrant.
  4. Add the red curry paste and mix well.
  5. Pour in the coconut milk and chicken broth, stirring to combine.
  6. Add the diced chicken and bring to a simmer.
  7. Cook for 10-15 minutes until the chicken is cooked through.
