- 2 cups heavy cream
- 1 cup whole milk
- 1 vanilla bean, split lengthwise
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- Preheat the oven to 325°F (160°C).
- In a saucepan, combine heavy cream, whole milk, and vanilla bean. Heat until just simmering.
- In a bowl, whisk egg yolks and granulated sugar until light and creamy.
- Gradually whisk the hot cream mixture into the egg mixture.
- Strain the mixture through a fine sieve to remove the vanilla bean.
- Pour the custard into ramekins and place them in a baking dish.
- Fill the baking dish with hot water halfway up the sides of the ramekins.
- Bake for about 40-45 minutes, or until set.
- Remove from the oven and cool to room temperature, then refrigerate for at least 2 hours.
- Before serving, sprinkle a thin layer of brown sugar on top and caramelize with a kitchen torch.
