  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chopped onions
  • 1 cup bell peppers, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and bell peppers, sautéing until soft.
  3. Stir in chicken breast, taco seasoning, and chicken broth.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove chicken, shred, and return to the pot along with beans, corn, and tomatoes.
  6. Simmer for an additional 10 minutes and season with salt and pepper.
