Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, sauté the onion, bell pepper, and garlic until soft.
  2. Add the chicken breasts, chicken broth, black beans, diced tomatoes, corn, and taco seasoning.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until chicken is cooked through.
  4. Remove chicken, shred it, and return it to the pot. Stir well.
  5. Serve hot with your choice of toppings.
