  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add the chicken breasts, taco seasoning, and chicken broth. Bring to a boil.
  3. Reduce heat and let it simmer for about 20 minutes, until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Stir in the black beans, corn, and diced tomatoes. Cook for an additional 10 minutes.
  6. Serve hot, garnished with your favorite toppings.
