- 1 pound boneless, skinless chicken breasts
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup onion, chopped
- 1 cup bell pepper, diced
- 1 jalapeño, minced
- 1 tablespoon olive oil
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and bell peppers, sauté until soft.
- Add the minced jalapeño and cook for another minute.
- Stir in the chicken, black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Remove the chicken, shred it, and return it to the pot.
