A delightful chicken taco soup that is both easy to prepare and packed with flavor.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup onion, chopped
  • 1 cup bell pepper, diced
  • 1 jalapeño, minced
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions and bell peppers, sauté until soft.
  3. Add the minced jalapeño and cook for another minute.
  4. Stir in the chicken, black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Serve hot, garnished with your favorite toppings.

Notes

  • This soup can be made in advance and tastes even better the next day.
  • Use rotisserie chicken for a quicker meal.
