1 cup grated carrots
1/2 cup almond flour
1/3 cup honey or maple syrup
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup walnuts, chopped
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine rolled oats, grated carrots, almond flour, cinnamon, baking soda, and salt.
In another bowl, mix honey (or maple syrup), melted coconut oil, and vanilla.
Combine the wet and dry ingredients until well mixed. Fold in chopped walnuts.
Drop spoonfuls of dough onto the prepared baking sheet.
Bake for 12-15 minutes or until edges are golden.
Allow to cool before serving.

For a vegan option, use maple syrup instead of honey.
