- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices turkey bacon, chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 3 large carrots, sliced
- 2 stalks celery, sliced
- 4 cups beef broth
- 2 cups potatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- In a Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the beef to the pot and brown on all sides.
- Stir in the onions and garlic; cook until soft.
- Add carrots, celery, and potatoes to the pot.
- Pour in the beef broth, and stir in tomato paste, thyme, and bay leaves.
- Bring to a boil, then reduce heat and simmer for about 2 hours until the beef is tender.
- Return the cooked turkey bacon to the pot and adjust seasoning as needed.
Notes
- For a thicker stew, mix a tablespoon of cornstarch with 2 tablespoons of cold water and stir into the stew before serving.
- Serve with crusty bread for a complete meal.
