A warm and hearty Dutch oven beef stew featuring a delicious twist of turkey bacon for added flavor.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 slices turkey bacon, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 large carrots, sliced
  • 2 stalks celery, sliced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the beef to the pot and brown on all sides.
  3. Stir in the onions and garlic; cook until soft.
  4. Add carrots, celery, and potatoes to the pot.
  5. Pour in the beef broth, and stir in tomato paste, thyme, and bay leaves.
  6. Bring to a boil, then reduce heat and simmer for about 2 hours until the beef is tender.
  7. Return the cooked turkey bacon to the pot and adjust seasoning as needed.

Notes

  • For a thicker stew, mix a tablespoon of cornstarch with 2 tablespoons of cold water and stir into the stew before serving.
  • Serve with crusty bread for a complete meal.
