A warming and hearty soup that combines the classic flavors of chicken parmesan in a convenient crockpot recipe.

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup uncooked pasta
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add chicken broth, diced tomatoes, uncooked pasta, garlic powder, and Italian seasoning.
  3. Stir in salt and pepper to taste.
  4. Cook on low for 6-8 hours or until chicken is tender.
  5. Shred the chicken with two forks and mix back into the soup.
  6. Stir in Parmesan cheese and mozzarella cheese until melted.
