Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 8 ounces egg noodles
  • Salt and pepper to taste

Instructions

  1. Add the chicken, broth, carrots, celery, onion, garlic, thyme, rosemary, and bay leaf to the crockpot.
  2. Cook on low for 6-7 hours or high for 3-4 hours.
  3. Once cooked, remove the chicken and shred it, then return it to the pot.
  4. Stir in the egg noodles and cook on high for an additional 30 minutes until noodles are tender.
  5. Season with salt and pepper before serving.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • This soup freezes well, just leave out the noodles if you plan to freeze it.
