A deliciously easy recipe for a comforting chicken noodle soup made in a crockpot.

Ingredients

  • 1 pound boneless chicken breasts
  • 4 cups chicken broth
  • 2 carrots diced
  • 1 celery stalk diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles
  • 1/2 cup fresh parsley chopped

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, thyme, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 4 hours, until chicken is cooked through.
  4. Remove chicken, shred it, and return to the soup.
  5. Add egg noodles and cook for an additional 20-30 minutes on high.
  6. Stir in fresh parsley before serving.
