Crock Pot Carnitas are a delicious and easy way to make juicy beef for homemade tacos.

Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth

Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
  2. Transfer the roast to a crock pot. Add onion, garlic, chili powder, cumin, oregano, salt, and pepper.
  3. Pour the beef broth over the ingredients in the crock pot.
  4. Cover and cook on low for 8 to 10 hours or until the beef is tender and shreds easily.
  5. Once cooked, shred the beef with two forks and mix with the juices.

Notes

  • Serve carnitas with tortillas, avocado, and fresh cilantro.
  • For added flavor, squeeze fresh lime juice over the shredded beef.
