- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- Heat the olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
- Transfer the roast to a crock pot. Add onion, garlic, chili powder, cumin, oregano, salt, and pepper.
- Pour the beef broth over the ingredients in the crock pot.
- Cover and cook on low for 8 to 10 hours or until the beef is tender and shreds easily.
- Once cooked, shred the beef with two forks and mix with the juices.
