A delicious and creamy zucchini and chicken pasta that’s perfect for weeknight dinners.

Ingredients

  • 2 cups zucchini, diced
  • 1 pound chicken breast, diced
  • 8 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the diced zucchini to the skillet and sauté for another 3-4 minutes.
  4. Stir in the garlic powder, salt, and black pepper.
  5. Add the heavy cream and bring to a simmer.
  6. Stir in the grated Parmesan cheese until melted and combined.
  7. Add the cooked fettuccine to the skillet and toss to combine.
  8. Garnish with fresh parsley before serving.

Notes

  • You can use any type of pasta you prefer.
  • Feel free to add more vegetables like bell peppers or spinach.
