  • 1 tablespoon olive oil
  • 1 pound cooked, shredded chicken
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in garlic and cooked chicken; cook for another 2 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add broken lasagna noodles and Italian seasoning, then reduce heat and simmer until noodles are tender.
  6. Stir in heavy cream and ricotta cheese until well combined.
  7. Remove from heat, and stir in mozzarella and parmesan cheese until melted.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh basil.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • For added flavor, try adding sautéed mushrooms or spinach.
