  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups fresh broccoli florets
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and crumble.
  2. Add onion to the pot and sauté until translucent. Stir in garlic and cook for another minute.
  3. Add broccoli florets and chicken broth. Bring to a boil and then simmer until broccoli is tender.
  4. Using an immersion blender, puree the soup until smooth.
  5. Stir in cheddar cheese, heavy cream, salt, and pepper until cheese is melted and soup is creamy.
  6. Serve hot, topped with crumbled turkey bacon.
