  • 3 cups corn kernels
  • 2 cups diced potatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme

Instructions

  1. Cook turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
  2. Add onion to the pot and sauté until translucent.
  3. Stir in corn, potatoes, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in cream, thyme, and season with salt and pepper.
  6. Top with crumbled bacon before serving.
