  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 2 cups carrots, sliced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add diced chicken to the pot and cook until browned.
  3. Add carrots, peas, and potatoes, cooking for an additional 5-7 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and stir in heavy cream, garlic powder, onion powder, thyme, salt, and pepper.
  6. Simmer for 15 minutes until vegetables are tender.
  7. Stir in the crispy turkey bacon before serving.

Notes

  • For a thicker stew, cornstarch can be added.
  • This stew can be made a day in advance for better flavor.
