A delicious and easy meal that combines couscous with flavorful chicken ham and fresh tomatoes.

Ingredients

  • 1 cup couscous
  • 200 grams chicken ham, diced
  • 2 medium tomatoes, chopped
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a saucepan, heat the olive oil over medium heat. Add garlic and sauté for 2 minutes.
  2. Pour in the vegetable broth and bring to a boil.
  3. Add couscous, diced chicken ham, and chopped tomatoes. Stir well.
  4. Cover the pot and remove from heat. Let it sit for 5 minutes.
  5. Fluff with a fork, season with salt, pepper, and mix in fresh parsley before serving.
