A deliciously creamy and cheesy broccoli cheddar soup that is easy to make at home and tastes just like the one from Panera.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound fresh broccoli, chopped
  • 4 cups vegetable broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, cooking until softened.
  3. Stir in the chopped broccoli and vegetable broth, bringing it to a boil.
  4. Reduce heat and simmer until the broccoli is tender.
  5. Using an immersion blender, blend the soup until smooth.
  6. Stir in the cheddar cheese and heavy cream, mixing until melted and combined.
  7. Season with salt, black pepper, and nutmeg to taste.
